We are a few doors off Sanjo-dori in Nakagyo ward, roughly six minutes on foot from Karasuma-Oike Station. There is no sign above the door, only a crate of whatever we are pressing that week on the step.
What we write down
Sae keeps index cards on ripeness readings, not on customers. The only personal information here is attached to a bottle order or to the weekly single-lot list, and both exist because someone asked us for them.
Telling us about allergies
Ingredients are listed in full on the board. If citrus peel oils or a specific fruit are a problem for you, say so when you order — we press to order — but the room is small and equipment is shared, so complete separation is not something we can promise.
Grower terms
We work with six growers across two prefectures and name them with their consent. What we pay each of them stays between us and them.
Analytics
There is no advertising code on this site and nothing that follows you elsewhere. We count page views in aggregate to see which notes get read.
Retention
Order records follow the statutory bookkeeping period; the single-lot list is kept until you ask to come off it. Contact hello@clovervaultzone.com about anything we hold.
Children
Bottle orders and the single-lot list are adult transactions. We do not knowingly hold information about anyone under fifteen.

Complaints
If something we poured was not right, say so at the counter — Sae would rather remake it than have you finish it politely. Otherwise write to the address above and you will get a reply within two weeks. You may also raise a matter with the Personal Information Protection Commission of Japan.
Changes to this policy
Sae rewrites this page when the way we take orders changes. The date at the bottom is the honest marker of when that last happened. Last revised 27 July 2026.
Index cards and what is on them
The cards Sae keeps are about growers and lots, not customers. Where a customer's name appears at all it is because they asked us to hold a bottle, and that note is thrown out once the bottle is collected.
Nobody's ordering habits are recorded or analysed here. There is no loyalty scheme, and there is nothing to opt out of.
